Trader Joe’s Spatchcock Chicken


Trader Joe’s Spatchcock Chicken comes in a lemon rosemary brine that is super delicious. Spatchcocked basically just means the back bone of the chicken was cut so that it can lay flat when cooking. This allows for more of a crisp on the skin with more surface area and less steam. This Trader Joe’s Spatchcock Chicken only has a handful of ingredients, including lime juice, and orange juice that give it a nice citrusy kick. Having it pre marinated in the brine makes it really hard to not have it come out moist and flavorful. You can either bake it in the oven or I like to put it on the grill, making sure to shake out the excess juices of the marinade that drip from the chicken when you take it out of the package…….…….

Trader Joe’s Butterflied Chicken


Whenever I am too lazy to make my own marinade, or even put a store bought one into a bag with raw chicken to sit overnight in fridge, this is my go to. I know this is really made for baking in the oven but if you keep the grill at not too high of a temperature you can get a nice char crisp on the skin without totally drying out the chicken. The butterflied or spatchcocked chicken method really is a great thing. So much easier to get crispy skin. But what it does lose is the nice juicy mixture of salt, butter and spices that comes from the inside of a whole chicken when you bake it. Let me know any good recipes like chicken salad anyone has used this in?!…..
